One of our favorite meals is cheeseburger macaroni. But, we eat very little beef. This choice is as much about health as it is environmental. I was able to recreate this dish tonight with Beyond Beef (a substitute that I guarantee you will not tell the difference) and tofu in place of half of the cheese. Everybody doesn’t need to be perfect, but everybody needs to make substitutions to make a difference in turning our climate crisis around.
25 years have gone by very fast. I think we look too young to have gotten married.
My dad made it through quadruple bypass surgery. Prognosis is really good. It has been a really long 3 days, but things are much improved.
Please keep my dad in your thoughts and prayers. He is having bypass surgery tomorrow night. Here he is walking the shore of Lake Michigan doing what he loves, searching for the perfect rock.
Night before the first day of school. College senior and junior, high school senior.
